Making Kimchi

Ingredients:

  • Onion

  • Green Onion

  • Apple

  • Pear

  • Radish

  • Ginger

  • Dried Anchovies & Kelp (or Fish Sauce)

These ingredients are boiled together to create a clean, flavorful base for kimchi.

Prepare the Broth

  • Garlic

  • Red Pepper Powder

  • Fish Sauce

  • Salted Shrimp (Saeujeot)

  • Plum Extract (Maesilcheong)

  • Sugar

The seasoning paste combines savory, spicy, and slightly sweet flavors that define kimchi.

Make the Seasoning Sauce

Ingredients:

  • Napa Cabbage

  • Coarse Salt

The cabbage is salted until softened, allowing it to absorb the seasoning and develop authentic kimchi texture.

Salt the Napa Cabbage

Ingredients:

  • Sweet Rice Flour (Glutinous Rice Powder)

  • Water (for cooking)

The thickened rice paste helps the seasoning coat the cabbage evenly and aids fermentation.

Cook the Sweet Rice Paste

After salting, thoroughly rinse the napa cabbage in cold water to remove excess salt. Drain well before mixing with the seasoning.

Mix the cabbage with the prepared seasoning paste until evenly coated. Pack it into a container to ferment into delicious kimchi.
